They are especially delicious when baked, grilled or poached. Leftover salmon can be made into delightful fish cakes.
Serving size: allow one-half pound of salmon per person.

Thawing and Filleting

Any good recipe begins with proper thawing and filleting. Both can have a profound effect on the quality of your salmon. To thaw whole salmon allow 5 hours per lb. Thaw salmon steaks 3-5 hours in refrigerator; 2 hours at room temp.

For best results thaw salmon in refrigerator. Lie salmon flat in pan preferably on a rack to allow for draining. Remove from fridge one hour before cooking.
